Today’s Tip: Diabetic Friendly Orange-Vanilla Freezer Pop

va freezer popSpring is here for most parts of the world, which means it won’t be long before summer, when hotter weather and school vacation mean children outside playing in the sunshine and having fun.

When your diabetic boy or girl is looking for a refreshing treat, try a tasty and easy to make frozen snack that’s healthy and nutritious, packed with Vitamin C and calcium.

Homemade orange-vanilla freezer pops (you know, tastes like that childhood treat we begged our moms to buy us when we were kids) are delicious.  You’ll need commonly available freezer pop molds before you start and less than five minutes of your time.

Here’s the recipe:

Diabetic Friendly Orange-Vanilla Freezer Pop

1 1/2 cup 100% orange juice (freshly squeezed or store bought, your choice
1 1/2 cup yogurt (preferably probiotic, but any sugarless yogurt will do)
1 tsp. vanilla extract
Sweetener of choice, to taste (some parents are okay with small amounts of sugar; others prefer artificial sweetener or an alternative, low glycemic sweetener like Stevia or agave nectar)

Blend all ingredients together. Pour into freezer pop molds and add popsicle sticks. Put in freezer for at least 6 hours.  Can be made weeks in advance, individually wrapped and stored in freezer.

The cool thing is that you can substitute almost any 100% juice or juice blend  (highly acidic fruits like lemons, limes, and grapefruit, or fruit with digestive enzymes like pineapple or papaya may curdle the yogurt). Try orange-strawberry-banana or other delicious blend.

Just be sure to check the nutritional information label and the ingredients before you buy any juice—you want to avoid sugar, high fructose corn syrup, and “evaporated cane juice” (some manufacturers have a real sense of humor, don’t they? 😉 )
